Elizabeth Carol Fey

Jan 4, 1951 — Oct 24, 2026

Carol Fey, 75, of Roseburg, Oregon, passed away on October 24, 2026. Born in Oak Harbor, Washington, on January 4, 1951, she was raised in Eugene, OR alongside her four siblings. She was the daughter of Donald and Elizabeth Rogers Willing. Carol graduated from Sheldon High School, attended Seattle University, and later graduated from the University of Oregon with degrees in Art History and Art Education.

Carol met her husband, Robert Fey, while teaching at Roseburg High School. They married on August 14, 1977, and lovingly referred to each other as "high school sweethearts." They had two children, Kathryn and Christopher. Carol and Bob shared a love of travel and enjoyed exploring the world together and with their family. Robert taught mathematics at Roseburg High School and preceded Carol in death on October 28, 2024.

Carol was a dedicated educator and artist who taught at Roseburg High School for over 30 years. She taught fine arts, graphic arts, photography, and art history. A Fulbright Scholar, she traveled to Belgium and brought her love of learning into her classroom. Carol embraced technology and taught graphic arts using some of the earliest computers introduced in schools, always keeping up with new trends. She is remembered as an inspiring, compassionate, and patient teacher who believed in her students.

Carol loved working in her yard and growing flowers of every color and variety. She often photographed the flowers she grew and then painted them. Carol had a particular passion for painting flowers and landscapes, especially in watercolor during her later years.

When traveling as a family, Carol loved taking her children to museums. Although they may not have fully appreciated those visits as children, as adults they cherish the love of museums and art history their mother instilled in them. One of her special joys was creating art with her grandson, Gabriel, who shares her enthusiasm for art.

Carol was an active member of P.E.O., supporting young women through scholarships and educational opportunities. She was also a member of St. Joseph Catholic Church. She was known for her sharp wit, quick humor, and love of trivia-and seemed to know just about everything.

Carol was preceded in death by her beloved husband, Robert Fey; her parents, Donald and Elizabeth Willing; her sister, Barbara Eriksen; and her brother-in-law, Thomas Fey.

She is survived by her daughter, Kate Mattox, and her husband, Nick; her son, Chris Fey, and his wife, April; her treasured grandson, Gabriel Robert Mattox; her sister, Helen Anderson, and her husband, Erik; her brother-in-law, Steve Eriksen; her brother, David Willing, and his wife, Ann; her sister, Joyce Willing; her brother-in-law, William Fey, and his wife, Gerri; her sister-in-law, Lorraine Fey; and numerous nieces and nephews.

A Rosary will be prayed at 11:30 a.m., followed by a Funeral Mass celebrating Carol's life at 12:10 p.m. on Friday, November 20, 2026, at St. Joseph Catholic Church. She will be laid to rest beside her beloved husband at Roseburg National Cemetery at 10:00 a.m. on Monday, November 23, 2026.
